Today you will get a glimpse of what this beautiful spirit produced on the beautiful Island of Maui in the United States. What started as a dream decades ago needed to be something unique and representing the island perfectly (I.e. not a wheat grain vodka). Something the world had never experienced before, a process that you cannot duplicate. This is how Hali'imaile Distilling Company was born; their Pau Maui Vodka is now available in Australia through 3Two1 Drinks.
This vodka is handcrafted using the finest Maui grown Pineapple mash and rainwater from Mt Haleakala, distilled in small batches and then infused with fresh Hawaiian honey, citrus peel and local botanicals to create their signature Vodka.
A decade has passed since Hali'imaile Distilling perfected their vodka making craft in Hawaii and made it right, but now they are proud to share a bit of Hawaii with the rest of the world. More particularly with Australia.
The LeVecke family has been in the Liquor industry since 1949. But the connection to the Hawaiian Islands started about 30 years ago. The family started building Hawaiian spirit brands during this time. But, first, the LeVecke Family wanted a distillery on the Hawaiian islands. Where they could take pure Hawaiian product and put it in a bottle for the entire world—leading to the creation of the Hali'imaile Distilling Company.
Neil and Tim, two brothers, decided to open a micro-distillery on Maui. But, first, it was necessary to locate an expert distiller, and Colorado's Master Distiller Mark Nigbur proved to be the perfect match.
As a micro-distillery veteran, Mark is known for his unconventional distillation methods and prior experience. The company's distinct look is the brainchild of Mark. As of right now, Cory, the distillery's son, is in charge of day-to-day operations.
Hali'imaile Distilling Company produces handcrafted, locally created, authentic Hawaiian brand spirits. Makawao, Maui's pineapple heartland, is where we call home. "Hawaii in a Bottle" is our goal. "The one spirit that put them on the map was Pau Maui Vodka," says Mark Nigbur.
Starting with the region's local ingredients and distilling in small batches utilising a unique glass still, Hali'imaile Distilling Company positions itself apart from the competition by creating authentic Hawaiian spirits. Everything about their distilling procedure is original and custom-made by their team. When the spirits have been distilled, they are blended with pristine Hawaiian spring water.
Upcountry Maui is a way of life. Hawaiians have farmed the volcanic soil of Upcountry farms for many years. Today, the area is primarily agricultural and residential. Upcountry comprises a few communities, including Kula, Makawao, Pukalani, and Ha'iku, located between Haleakala National Park's summit and Kahului. As a result of the revitalisation of Makawao's Paniolo (horseback riders) tradition, the town's restaurants, shops, and galleries have all been reopened.
Hawaiian spirits may be made in abundance because of the state's tropical climate. However, this premium vodka must be distilled to be considered authentic Hawaiian in a particular location. This area is home to the Hali'imaile Distilling Company and the only distillery of its kind on the island of Maui.
Made in Hawaii since 2008, the pristine surroundings provide the distillers with clean air, fresh water and an abundance of farmland.
The pineapple was first brought to Hawai'i by the Spanish and referred to as "Hala kaiki" because it resembled the Hala tree (Pandanus tectorius or screwpine). It was similar to the English's use of "pineapple" as a name for the fruit because it resembled the pinecone. In the 18th and early 19th centuries, the pineapple had found its way to Hawaii and grown commercially on its islands.
Like a treasure from the New World, Christopher Columbus brought back pineapples to Europe. However, it wasn't until later centuries that sailors carried the pineapple to New England, where it became symbolic of sailors' return from distant ports and their willingness to welcome guests.
The pineapple became the symbol of hospitality. This is why 3Two1 Drinks was proud to insert it in its logo and it only made sense to distribute a vodka made from pineapple.
It is high in sugar and low in acid, giving it an unbelievable clean mash.
What is mash? Mash is produced from the pineapple (barley for a whisky or sugar cane for a rum) that places no restrictions on how it should taste. Sugar, yeast, nutritional salts, and water make the most straightforward mash.
Only the alcohol is needed, but the mash must be as clean as possible to get great results. Distillation is used to extract the alcohol from the fermented mash.

In addition to being located in the centre of pineapple fields that have been farmed for more than a century, Hali'imaile Distilling has access to the world's best pineapple. As a result, this is a cinch! Their fermentation process gets off to a strong start thanks to the high sugar content of Maui Gold® pineapple.
The bright, sunny days and cool, refreshing nights of Maui's pineapple growing season, combined with the island's volcanic soil and freshwater, produce an impeccable fruit. It takes 18 months to produce a pineapple in Hawaii, but only 2-3 days before it's ready to eat in the field. Because pineapples do not continue to ripen after they are picked, they must be harvested at the right time. PAU Maui Vodka is noted for its clean and refreshing taste because they only use pineapples at their peak of maturity.
In 2018, the Levecke family purchased the Maui Gold Pineapple Company, securing their pineapple supply for decades to come. Pineapples from the Maui Gold variety are known for their increased sweetness and juiciness and is less acidic than other types.
To create this hybrid, a horticulturist crossed native pineapple kinds over 50 years ago. Their fame and prosperity from this hybridised pineapple is something they had not anticipated in the United States and now worldwide.
Vodka being made with Hawaiian pineapples and spring water from "up-country", Maui is a one-of-a-kind beverage. Whether or not a vodka created from fruit such as a pineapple retains its particular flavour is the question. Actually, no. It is a clean neutral vodka with a slight sweetness of the pineapple that comes through, but it's not overpowering.
The nectar from the Maui Gold Pineapples is harvested and sent to the distillery for fermentation. The Maui Gold mash is then distilled in 14-foot column stills constructed entirely of pharmaceutical-grade glass in order to keep the flavour of metals out of the distillate.
The Column resembles a continuous still, but it contains volcanic rock to improve filtration. As a result, after only one round of distillation, the product already includes 96% pure alcohol!
Pau Maui #Vodka 40% ABV (#alcoholicbeverage) is the company's flagship product and the only Vodka made with pineapples currently available for purchase. However, rather than tasting like pineapples, it has a subtle sweetness and unfussy neutrality to it.

Almost all distilled spirits are sugar-free because they only contain alcohol. Therefore, in terms of carbohydrate consumption, Vodka is an excellent choice.
Vodka is traditionally manufactured from grains like wheat and potatoes, which may seem strange given the high glucose content of those foods. Fermentation and distillation, on the other hand, eliminate carbohydrates. However, Pau Maui Vodka uses the Maui Gold Pineapple.
Vodka is about the same as other distilled liquors like rum, whiskey, gin, and tequila in terms of calories and carbohydrates. But, inevitably, it is contingent upon the brand and the evidence.
Additives like spices and sugar alter the flavour of some rums and their nutritional value.
Vodka has fewer calories and carbs per serving than wine and beer.
Aside from the warm alcohol flavour that you many find unpleasant, Vodka has virtually little flavour on its own. Pau Maui Vodka has a creamy and pleasant mouthfeel.
To flavour the Vodka, many drinkers add sweet juices or crafted sodas to the mix. The problem is that many mixers have a high sugar content, which can wreak havoc with your diet.
Orange juice in a glass: For example, it has 112 calories, but a can of regular soda has over 140 calories. Sugar accounts for the vast majority of those energy intake figures to make matters worse.

London Essence Soda water, London Essence Roasted Pineapple soda, cranberry juice with lemon or lime juice, mint leaves, and iced tea.
45 mL PAU Maui Vodka
30 mL lime juice
30 mL pineapple juice
90 mL ginger beer
One mint sprig
One grilled pineapple slice
Combine Pau Maui Vodka with the lime and pineapple juices in a Moscow mule mug filled with ice. Stir to combine. Garnish with a grilled pineapple slice and a mint sprig.

Coconut plays a leading role in this oil-washed vodka martini.
60mL coconut oil-washed PAU Maui Vodka
15mL dry vermouth
Stir with ice and strain into a chilled coupe. Express the twist over the drink.
*To wash Vodka with coconut oil, combine 1 part melted coconut oil with four parts PAU Maui Vodka in a jar and sit for several hours, shaking occasionally. Put in the freezer overnight, then pour through a coffee filter to remove the solid coconut oil.
