Our first Misterio. In this presentation we were looking to present a mezcal with extraordinary features, way beyond the artisanal production methods offered in areas of great mezcal history, we went into the Sierra to seek for a really traditional production chain.

Agave: Espadín (Angustifolia Haw)

Mezcal Type: Joven 100% Agave

Cooking: Earth oven, using wood and river stones.

Milling: Hand smash in Sabino wood canoes.

Fermentation: Open / Natural in wood vats with wild yeasts and spring water.

Distillation: Double in Clay Pot StillRegion: Sola de Vega, Oaxaca.
