During one of our visits with our Mezcalero Don Antonio in Sola de Vega, we had an unusual encounter in the agave fields with a plant that was nearly identical to the Arroqueno. Only the connoisseur could differentiate the two with the Coyote.
Even if they are so similar, once transformed into mezcal the Coyote has way more herbal notes than the Arroqueno. like the Mexicano, the Coyote is extremely rare and not produced as much as the other Misterios but if you get to taste it, it will become one of your favourites without a doubt

Cooking: Earth oven, using wood and river stones
Milling: Hand smashed in Sabino wood canoes
Fermentation: Open/ Natural in wood vats with wild yeast and spring water
