La Dama Tequila | Certified Organic, Highlands of Jalisco

Los Altos de Jalisco · 100% Certified Organic

La Dama Tequila

A certified organic Highlands tequila co-founded by a third-generation agavero and a mixologist — built on the largest sustainable agave farms in Los Altos.

The Story

La Dama is the work of two people: Marcos Galindo, a third-generation agavero whose family runs the Nebulosa Project for sustainable agave cultivation, and Martin Kovar, a mixologist who came into the venture from the bar side. They built La Dama with the Pérez family — the largest sustainable agave growers in Los Altos de Jalisco — as a tequila that could pass full organic certification without losing the Highland character.

The name "La Dama" — "The Lady" — is deliberate. The brand is positioned as a tribute to femininity, with a nod to the Chichimeca culture indigenous to Los Altos. The packaging carries that idea forward: elegant rather than rustic, modern rather than nostalgic, designed for the bar shelf of operators who care about how the bottle reads as well as how the liquid pours.

From the Highlands, La Dama has built a focused export footprint into Europe and Australia. 3Two1 Drinks distributes La Dama across the Australian market, working with venues and retailers that want a certified organic option in the agave category.

What Makes It Different

La Dama is 100% certified organic — a meaningful distinction in tequila, where the volume players rely heavily on synthetic fertilisers and herbicides to manage agave at scale. Certification means no synthetic chemicals at the field level, traceable agave from organic-certified estates, and audited production conditions. Very few tequilas at La Dama's price point carry that full certification.

The agave comes from Los Altos de Jalisco — the Highland tequila region above 2,000 metres — and specifically from sustainable estates managed by the Pérez family in partnership with the Galindo Nebulosa Project. The cultivation logic is long-cycle: agave is left to mature properly rather than harvested early to hit volume, which in turn produces a sweeter, fuller piña and a softer fermentation.

The bartender's case for La Dama is straightforward — it is a Highland organic tequila that drinks bright and fruit-forward, with the clean finish that comes from agave grown without synthetic load. It mixes cleanly into citrus drinks, holds its character against stirred-down bitters, and gives a venue a story to tell on the back-bar.

The Range

La Dama Blanco

Unaged, 100% certified organic Highlands tequila. Cooked agave, citrus, white pepper. The clearest expression of the house style.

La Dama Reposado

Rested in oak. Soft vanilla and light caramel over the bright Highland agave underneath.

La Dama Añejo

Longer oak ageing. Deeper notes of dried fruit and toasted oak, still recognisably Highland organic at the core.

How Bartenders Use It

Tommy's Margarita

La Dama Blanco, fresh lime, agave syrup. Shake hard, double strain. The cleanest expression of an organic Highland Margarita.

Paloma

La Dama Blanco, fresh pink grapefruit, lime, soda, salt. Long, dry, refreshing. The organic profile reads especially cleanly against fresh grapefruit.

Highland Spritz

La Dama Blanco, dry vermouth, soda, grapefruit twist. A low-ABV aperitivo build for service venues moving toward lighter agave pours.

Reposado Old Fashioned

La Dama Reposado, agave syrup, two dashes Angostura, orange peel. Stir long. Soft oak, bright agave, clean finish.
