International Pineapple Day! Cocktails Galore
Ahh, the majestic pineapple. Not just our logo or a delicious snack: it's also the symbol of hospitality around the world.
On this, the International Pineapple Day, we launch the first instalment of the 3Two1 Drinks Cocktail Book. Ever wondered what to do with the bottle of tequila staring you in the face after a round of shots? Wonder no longer! Each and every product in the 3Two1 Drinks catalogue will have its own section, with serving ideas ranging from simple 3:2:1 drinks, to more involved cocktails for showing off to your friends.

So, why the pineapple?
In the 16th century, pineapples were so rare in Europe that the super wealthy would hire the fastest boats in the world to transport the tropical fruit to their estates, where a solitary pineapple might be prominently displayed at the best parties. The pineapple became such a status symbol that some people would rent a display pineapple by the hour, without ever getting to taste the sweet juice within!
Nowadays, you can skip the speedboat and get a taste of Giffard Caribbean Pineapple anywhere good drinks are sold. Made by a fifth generation family established in Angers, France in 1885, sun-ripened pineapples are macerated with candied pineapples, and finished with a decadent blend of spices and rich 7-year-old Caribbean rum. It's perfect over ice or drizzled over your favourite fruit dessert (pavlova, anyone?!), but here's some cocktail ideas to get you started.
Bermuda Pineapple
You’ll need:
- Makar Original Dry Gin
- Giffard Caribbean Pineapple Premium Liqueur
- Giffard Cinnamon (Canelle) Syrup
- Lime juice
- Lemon juice
- Allspice (one whole berry, or a dash of powdered)
- A shaker
- Optional (but encouraged), a hollowed-out pineapple
1. To your shaker, add:
- 20mL (1TBSP) Giffard Caribbean Pineapple
- 40mL (2TBSP) Makar Original Dry Gin
- 10mL (2tsp) Giffard Cinnamon Syrup
- 15mL (3tsp) Lime juice
- 15mL (3tsp) Lemon juice
- 1 allspice berry or dash powdered allspice
3. Crack the seal and strain your drink over crushed ice, into your hollowed-out pineapple (or cocktail vessel of your choice).
4. Garnish with a little tiki madness. We like a lime husk filled with absinthe, cinnamon sticks, pineapple leaves, and a touch of fire.
Rum might be the first spirit people think of when it comes to tiki, but Makar's juniper-forward palate plays really nicely with spices like cinnamon, clove, and allspice. Make sure to use an under-ripe pineapple, so it doesn't go mushy in your hands!
Kokomo
Frances Flores, 2019 Giffard West Cup FinalistYou’ll need:
- Toquinho Cachaça
- Giffard Caribbean Pineapple Premium Liqueur
- Lime Juice
- An egg
- A shaker
1. To your shaker, add:
- 20mL (1TBSP) Giffard Caribbean Pineapple
- 40mL (2TBSP) Toquinho Cachaça
- 30mL (1.5TBSP) Lime juice
- 1 egg white
3. Crack the seal add ice, and shake again until well chilled, about 15 seconds
4. Open the shaker, strain your drink into a cocktail coupe, garnish with a pineapple leaf
This cheeky cachaça sour made it to the finals of the 2019 Giffard West Cup. It's simple to make, but floral, fruity, and oh-so-quaffable. Get ready to keep making these all night.
Little Birdy

- Demonio de los Andes Pisco Acholado
- Giffard Caribbean Pineapple Premium Liqueur
- Giffard Wild Elderflower (Fleur de Sureau Sauvage) Premium Liqueur
- Giffard Strawberry (Fraise de Bois) Liqueur
- Grapefruit juice
- Lemon juice
- A shaker
1. To your shaker, add:
- 15mL (3tsp) Giffard Caribbean Pineapple
- 40mL (2TBSP) Demonio de los Andes Pisco Acholado
- 5mL (1tsp) Giffard Wild Elderflower
- 5mL (1tsp) Giffard Strawberry Liqueur
- 20mL (1TBSP) Grapefruit juice
- 20mL (1TBSP) Lemon Juice
3. Crack the seal and strain your drink into a cocktail coupe
Our take on Death & Co's cocktail doesn't require fancy restaurant gadgets: just a well-stocked home bar. Bright and floral, with a tropical, jammy feeling, this one's sure to impress at parties.

Pineapple Swizzle
You’ll need:
1. To a tall glass, add:
- 40mL (2TBSP) Pueblo Viejo Reposado Tequila
- 20mL (1TBSP) Giffard Caribbean Pineapple
- 20mL (1TBSP) lime juice
3. Top your glass with crushed ice, and garnish with a pineapple leaf and lime wheel
Something we whipped up one Monday in the office, this one is easy to put together wherever you are, and instantly brightens your day with soft spice and pineapple goodness.
Piña Peño
You’ll need:
- Los Siete Misterios Doba Yej
- Giffard Caribbean Pineapple Premium Liqueur
- Lime Juice
- Jalapeños
- A muddler (or a spoon)
- A shaker
1. Add jalapeños as desired to the bottom of your shaker, and press them with the flat end of your muddler
2. To your shaker, add:
- 30mL (1.5TBSP) Giffard Caribbean Pineapple
- 30mL (1.5TBSP) Los Siete MisteriosDoba Yej
- 30mL (1.5TBSP) Lime juice
3. Crack the seal and strain your drink into a salt-rimmed glass
For the spice lovers out there, this punchy take on a margarita is sure to get you going. Perfect for hot days by the pool, or staring longingly into the water on a rainy day.
Whisktea Highball
You’ll need:
1. To a highball glass, add:
- 30mL (1.5TBSP) Giffard Caribbean Pineapple
- 20mL (1TBSP) 1770 Peated Single Malt Whisky
4. While a citrus twist really adds another dimension to the drink, feel free to omit this step if you don't have a lime handy
