Pomegranate Spritz Recipe
A lighter, drier spritz that sits between the Aperol original and a cold-pressed juice. Real pomegranate from Giffard does the heavy lifting — no artificial pink.
Ingredients
- Prosecco or Australian sparkling brut90 ml
- Giffard Pomegranate (Grenadine) syrup20 ml
- Dry vermouth or Cocchi Americano30 ml
- Soda water30 ml
- Garnish: rosemary sprig and pomegranate seeds—
Method
- Fill a large wine glass to the top with cubed ice.
- Pour in the Giffard Pomegranate syrup, dry vermouth and prosecco in that order.
- Top with soda water.
- Stir once gently with a bar spoon to combine without losing carbonation.
- Garnish with a rosemary sprig clapped between the palms and a small scatter of pomegranate seeds.

Why this works
The spritz isn't a recipe so much as a format — a long, lightly bittered, sparkling aperitivo. Most spritz builds top out at 8% ABV in the glass. This one runs closer to 7% but pulls back on sweetness, using Giffard Pomegranate syrup in place of the bittersweet Italian liqueurs.
Giffard's Pomegranate (often labelled Grenadine in older Australian price lists) is the modern revival of the classic — real pomegranate juice concentrate, no artificial red dye, no high-fructose corn syrup. It carries fresh tannic edge instead of cherry-cola flatness, which is what makes this spritz feel like a properly bartender-made drink instead of an alcopop.

Build in the glass, never in a shaker — you want the prosecco intact. The rosemary garnish isn't decorative: clap it once between your palms before adding to release the oils. Can I substitute pomegranate juice?
Pure juice is too thin and tart on its own — you'd need 60 ml of juice plus 10 ml sugar syrup. The Giffard syrup is concentrated and pre-balanced for cocktail work.
What's the difference between Giffard Pomegranate and Grenadine?
Practically very close — Giffard's Grenadine is the heritage product, sweeter and rounder. Pomegranate is the modern revival with sharper fruit character.
Is it very sweet?
No — drier than an Aperol Spritz. The dry vermouth pulls the sugar back and the soda water lengthens it.
Can I make this without prosecco?
Use 120 ml dry sparkling wine of choice — any Australian brut works, or a non-alcoholic sparkling for a zero-proof build.
