How we build a recipe

Every recipe on this page goes through the same filter: it has to taste right at a working bar, not just at a photographer's table. We test in metric, always — millilitres, never ounces. Citrus is fresh-squeezed. Egg whites are real. Mint is bruised, not pulverised. Where a brand-name product is specified, it's because we've tried the substitutes and they don't perform the same.

The Giffard syrup and liqueur range — 50 of each, all made at the family distillery in Avrillé, France since 1885 — anchors most of these builds. The exclusive spirits we distribute do the rest. Tequila

The Mexican range: Casa San Matías (founded 1886, Magdalena, Jalisco), Pueblo Viejo (Casa San Matías's everyday line) and La Dama (Mexico's first certified-organic tequila, from Los Altos Jalisco).

Pueblo Viejo Paloma

Mexico's most-poured long drink. Fresh grapefruit, lime, blanco tequila, soda. The drink Mexicans actually drink.

Tommy's Margarita

The 1990s San Francisco riff — no orange liqueur, just tequila, lime and agave. Built on Casa San Matías Gran Reserva.

Ranch Water

West Texas hill-country's three-ingredient long drink. Pueblo Viejo Blanco, lime, mineral water.

La Dama Skinny Margarita

Lower-sugar Margarita on Mexico's first certified-organic tequila. Lime, agave nectar, salt rim.

Rum

The Caribbean range: Worthy Park Estate (founded 1670, 1,200 feet above sea level in Jamaica's Lluidas Vale), Rum-Bar (Worthy Park's bartender line) and Black Tears (Cuba's only spiced rum to carry the Vigía seal).

Worthy Park Mai Tai

The 1944 Trader Vic original — no pineapple, no grenadine. Built on high-ester Jamaican rum, orgeat and curaçao.

Rum-Bar Daiquiri

Three ingredients. Two minutes. The bartender's litmus-test cocktail, built on Worthy Park's 63% overproof white.

Black Tears Cuban Mojito

The Havana spec on Cuba's only Vigía-sealed spiced rum. Coffee, cocoa and ají dulce backbone, mint and lime up top.

Liqueur-led (Giffard)

Giffard's liqueur range covers more than 50 SKUs across the Classic, Crème, Modern and Premium tiers — all distilled and bottled at the family-owned facility in Avrillé. These five recipes show what the range can do across categories.

Vanilla Espresso Martini

The London classic, rebuilt. Giffard Madagascar Vanilla replaces the sugar syrup for crème pâtissière depth.

Strawberry Daiquiri

Shaken, not blended. Giffard Fraise des Bois plus fresh strawberries and lime — no slush, no straw, no apologies.

Lychee Martini

The late-90s London classic. Giffard Lytchee, vodka, dry vermouth, lime. Stirred, never shaken.

Pomegranate Spritz

A lighter, drier spritz on real pomegranate concentrate. Prosecco, dry vermouth, no artificial pink.

Pear Old Fashioned

An autumn-leaning bourbon Old Fashioned. Giffard Pear syrup replaces the sugar cube, orange peel finishes it.

Parisian Mojito

The Giffard cocktail-book original. Menthe-Pastille (since 1885), cloudy apple juice, fresh lemon — a martini-glass Mojito.

South American

The Andes and the Atlantic coast: Demonio de los Andes (distilled at the Tacama estate, Peru — vineyards founded in 1540) and Thoquino Cachaça (100% pure sugar-cane cachaça from Brazil).

Demonio Pisco Sour

Peru's national cocktail. Acholado pisco, lime, egg white, Angostura — with the dry-shake method spelled out.

Thoquino Caipirinha

Brazil's national cocktail. Lime, sugar, 100% sugar-cane cachaça — built in the glass, muddled hard.
